This page is how I make jerky , thankyou for your opinion , but I have no idea what I am doing this is just how I make it I am still alive and it taste's good , I have learnt from trial and error , I am happy with the end result

( STEP 10 IS EATING )
Step 1: Mix marinade to taste. (I have used smoky bbq marinade and soy sauce , I used the soy to thin the bbq sauce just a little I am still experimenting with flavour and meat
Step 2: 1.5 kilo's of beef roast sliced 7/16 thick by one inch wide. enough to fill 5 racks I am still learning about what cuts to use and thickness
step 3:Cut meat in to 1" strips and marinade overnight.
Step 4: Make sure racks are clean. there a bastard to keep clean, I soak them overnight and use a Scrubbing brush to clean them
Step 5: Place beef strips equally on drying racks leaving room for air to circulate this is important. then repeat on next rack try until you run out of beef or racks
step 6: place lid on dryer and turn on and leave . my dryer has no heat setting .if you want a more even dry it is recommended to swap racks around every couple of hours or so .I don't but I still check it regularly just try to restrain from eating as you go
step 7: check regularly to make sure everything is going ok. roughly takes me 12 hours give or take due to thickness of meat
step 8 : make note of the start time . if you do a good job you know how long you made it for and can learn from mistakes
step 9 : drying time. Drying time's may vary from dryer to dryer so refer to your manual / trial and error until no know your dryer
Recipe's
batch 1: Honey and Soy marinade
home made honey and soy marinade 2 table spoons of honey and enough soy to water it down while stirring only problem when I made this I kind of put too much honey in and made the jerky look bloody awesome but almost turned beef into a lolly
Bach 2: Teriyaki marinade by kikkoman it was ok but I have had betterworked real well in the dryer for roughly 12 hours ( 12 hours ish for chewy jerky longer if you like totally dried jerky)
Bach 3 : Smoky Bbq and Soy in the dryer now
Bach 4 : Just Soy sauce marinating
batch 5 : ( my favourite ) soy sauce small amount of honey ( not much ) garlic powder onion powder chilli powder and tomato sauce
